Perdiendo sabores: factores socioculturales detrás del declive de la cocina tradicional en Santa María, Perú

La cocina tradicional constituye un componente central del patrimonio cultural inmaterial y de la identidad territorial; sin embargo, en diversos contextos locales enfrenta un proceso progresivo de debilitamiento asociado a transformaciones socioculturales y territoriales. El objetivo de este estudio es determinar los factores socioculturales que influyen en el declive de la cocina tradicional en el distrito de Santa María, Perú, territorio que ha experimentado significativas transformaciones urbanas, productivas y económicas. Se adoptó un diseño mixto secuencial exploratorio: la fase cualitativa inicial permitió identificar, desde las percepciones de los actores locales, los principales factores asociados al declive; posteriormente, estos hallazgos orientaron la construcción del instrumento cuantitativo, aplicado a 195 residentes del distrito y analizado mediante PLS-SEM. Los resultados evidencian que la expansión inmobiliaria y las nuevas tendencias gastronómicas ejercen un efecto directo y significativo sobre el declive de la cocina tradicional, mientras que la transformación de la agricultura local incide de manera decisiva en el acceso a insumos tradicionales, actuando como variable mediadora. Los hallazgos confirman el carácter multifactorial del fenómeno y permiten comprender este declive como un indicador sensible de las tensiones territoriales que afectan la reproducción cotidiana de las prácticas culinarias.
