Losing Flavours: Sociocultural Factors Behind the Decline of Traditional Cuisine in Santa María, Peru

Traditional cuisine constitutes a central component of intangible cultural heritage and territorial identity; however, in many local contexts it is undergoing a progressive process of decline associated with sociocultural and territorial transformations. This study aims to determine the sociocultural factors influencing the decline of traditional cuisine in the district of Santa María, Peru, a territory that has undergone significant urban, productive, and economic transformations. An exploratory sequential mixed-methods design was adopted: the initial qualitative phase identified, based on the perceptions of local actors, the main sociocultural factors associated with this decline; subsequently, these findings guided the development of a quantitative instrument administered to 195 district residents and analysed using PLS-SEM. The results indicate that real estate expansion and new gastronomic trends exert a direct and significant effect on the decline of traditional cuisine, whilst the transformation of local agriculture decisively influences access to traditional ingredients, acting as a mediating variable. These findings confirm the multifactorial nature of the phenomenon and allow this decline to be understood as a sensitive indicator of the territorial tensions affecting the everyday reproduction of culinary practices.
