Validating a Model for Analysing Gastronomy as a Vector of Cultural Identity and Sustainable Development in Tourist Cities

This study analyses gastronomy as a vector of cultural identity and sustainable development in tourist cities through a comparison between Juazeiro do Norte, Brazil, and Santiago de Compostela, Spain. The objective was to examine how residents and tourists perceive local gastronomic spaces across dimensions related to hospitality, authenticity, affective memory, accessibility, and sustainability. This quantitative, descriptive, and comparative study drew on 625 structured questionnaires administered in gastronomic spaces, with 311 collected in Brazil and 314 in Spain. The results revealed statistically significant differences in 22 of the 25 variables analysed, with higher mean scores in Juazeiro do Norte, particularly in hospitality, authenticity, and affective bonding. Santiago de Compostela displayed perceptions more closely associated with the institutionalisation of tradition and service efficiency. It is concluded that gastronomy constitutes a space of social cohesion, cultural valorisation, and the reinforcement of sustainable development strategies in tourist destinations.
