Savouring Peru through Tourists' Profiles: An Artificial Neural Networks Perspective

El objetivo de esta investigación es determinar las variaciones que se producen en diferentes constructos sobre la importancia de la gastronomía —motivación para viajar, intención de visitar destinos concretos, aspectos y experiencias gastronómicas, y emociones— según el perfil sociodemográfico de los turistas (edad, género, estudios universitarios e ingresos). A partir de 1.042 cuestionarios válidos, se desarrolló una red neuronal artificial empleando las características del perfil sociodemográfico como variables de entrada. Este enfoque resulta útil para el desarrollo de productos y servicios adaptados a turistas interesados en gastronomía. Los resultados muestran que la edad es la variable más influyente en el modelo, siendo los turistas más jóvenes quienes atribuyen valores más elevados a los constructos analizados. Estos hallazgos contribuyen a la investigación sobre turismo gastronómico en Perú y ofrecen orientaciones prácticas para la segmentación de mercado y la gestión de destinos turísticos.
