Approximations to the gastronomic landscape through the gastronomic offer of Valle de Guadalupe, Baja California

This study examines the gastronomic landscape as a central element for analysis in the context of the Valle de Guadalupe, Mexico, a rapidly growing eno-gastronomic destination. The objective is to understand the characteristics that define the gastronomic landscape in the area and how these are presented in the local restaurants. To this end, a qualitative and exploratory study was conducted, incorporating various type of analysis: bibliometric, content, and discourse. Fifteen interviews were conducted with restaurant operators using Atlas TI V.20. Disciplinary and methodological approaches are distinguished, as well as the use of local ingredients, resulting in a dynamic and diversified landscape reflected in the offerings of the restaurants. Challenges include access to resources and the growth of gastronomic supplies. The study contributes to an understanding of what the gastronomic landscape represents and its importance to the local community.
