A sustentabilidade nos estudos de turismo gastronómico. Uma revisão sistemática da literatura

Resumo

O objetivo deste estudo foi analisar a evolução da abordagem da sustentabilidade no turismo gastronómico. Foi analisado e classificado um conjunto de 141 documentos produzidos entre 2010 e 2023. Os resultados indicam 6 linhas principais de investigação, sendo elas: 1) abordagens teóricas e conceptuais da sustentabilidade no turismo gastronómico, 2) Gestão de destinos gastronómicos, 3) Ativação e gestão do património culinário, 4) Gestão sociocultural de destinos gastronómicos, 5) Gestão ambiental e territorial de destinos gastronómicos e 6) Gestão sustentável de destinos gastronómicos.
