Gastronomy is becoming a key factor in attracting tourists and thus in defining the competitiveness of a tourist destination and as key for the promotion. The aim of this paper is to present an analysis of culinary tourism in the city of Córdoba (Spain). Here, a study is presented which analyses both the supply and demand of culinary tourism. The main results of this study reflect the high level of education among the tourists, the longer length of their stay in the city and the high level of satisfaction with both the local food and the rest of the resources available to tourists in the city.
