This article aims to study the tourism systems and the active role of anthropology in building a critical approach. It will focus on a case study developed in Madeira Island (Portugal) grounded in a ethnography of regional tourism sector, in particular, on the supply side, focused on the observation in the promoters/producers of services related to the product "levadas".
