La sostenibilidad en los estudios del turismo gastronómico. Una revisión sistemática de literatura

El objetivo de este estudio fue analizar la evolución del enfoque de sostenibilidad en el turismo gastronómico. Se analizaron y clasificaron un conjunto de 141 documentos realizados entre 2010 y 2023. Los resultados indican 6 principales líneas de investigación, siendo: 1) aproximaciones teóricas y conceptuales a la sostenibilidad en el turismo gastronómico, 2) Gestión de destinos gastronómicos, 3) Activación y gestión del patrimonio culinario, 4) Gestión socio cultural de los destinos gastronómicos, 5) Gestión ambiental y territorial de los destinos gastronómicos y 6) Gestión sostenible de los destinos gastronómicos
